Hmm, first I'd check mixer settings (ecasound doesn't modify those) with
alsamixer or some such tool. You should select the correct input source
(mic or line-in) and set the capture level (analog gain). If you still
have trouble, try bypassing the plugin layer:

ecasound -i alsa,hw:0 -o foo.wav

... and see if it works better.
