I realised what I was doing wrong. I fixed it by -
a. running jack daemon
b. running ecasound in recv mode

ecasound -f:32,1,44100 -z:db,1000000 -b:8192 -G:jack,ecasound,recv \
-a:1 -i jack -o ch3.mp3 \
-a:2 -i jack -o ch7.mp3 \
-a:3 -i jack -o ch8.mp3

c. jack_transport and selecting play which kicks off the
recording process.

Now I'm able to record the 3 channels onto individual files.
