yes, but you'd generally have to sync the cards together and that is
only possible reliably by using wordclock. I think the Delta 1010 you
mentioned has got that. Also the RME HDSP - Multiface and Digiface.
These will require an extrenal word clock signal generator in general.

Consumer cards don't usually provide for working in sync, although
I recall that there is way of doing exactly that - using more than
one card to record, by using alsa and doing some crafty eding of your
.asoundrc. Don't remember the details though. Either have a look at
the alsa site or if nobody has better details here, you can post to
the linux-audio-users list too.

If the system you are thinking of setting up doesn't require devices to
be in sync with each other you can try what Lee has suggested.
