AFAIK, you cannot do that with the command line. You can however do
that using the interactive mode.

You enter the interactive mode by issuing ecasound -c

See the ecasound-iam man page. In particular the cop-set command, it
reads:
         cop-set ˘chainop_id,param_id,value˘
               Changes the value of a single chain operator
               parameter. Unlike other chain operator commands, this
               can also be used during processing. See also
              ˘cop-get˘
